
Simple Congee Recipe
I love congee. It is such a simple and nourishing dish that we turn to in our home often, when we might be feeling our immunity is a little compromised, or during my bleed. It can be dressed in so many different ways. Here is one simple way I like to prepare it:
Ingredients
3/4 cup organic short grain glutinous rice (long grain jasmine or basmati work too)
8 cups chicken meat stock (or another kind of broth, or just water)
1 tsp salt
I tbsp fresh ginger
2 cloves garlic (optional)
sesame oil or ghee
Method
I like to soak my rice overnight in cold water, with a dash of vinegar
Rinse rice and pop into pot
Add stock, salt and ginger
In a frying pan, heat 2 tablespoons of ghee or oil and fry the garlic
Add garlic and oil into rice mixture
Bring to boil, then leave to simmer with lid on, stirring regularly so it doesn’t stick. You can also make it in the slow cooker.
Top with chopped shallots, shredded chicken, boiled eggs, or anything else you fancy!
